Ingredients:
1 T. avocado or olive oil
1 medium red onion, chopped
2 t. minced garlic
1 orange bell pepper, chopped
2 c. frozen corn
2 cans (14 oz) fire roasted diced tomatoes
1 can black beans, drained and rinsed
1.5 c. cooked quinoa
3 c. baby spinach
2 T. taco seasoning
cheddar or Mexican cheese for topping
Instructions
Cook quinoa according to instructions on package (prep ahead of time for an even quicker cook time).
Pre-heat oven to 375.
Heat oil in a large skillet. Add onions, garlic and bell pepper; sauté for 5-7 minutes or until softened. Stir in taco seasoning, corn, diced tomatoes and black beans; sauté for another 3-5 minutes. Add in baby spinach and cook until lightly wilted (~ 3 minutes)
Remove from heat. Top with cheese (or leave out if vegan or dairy free!) Cover and bake in oven for 5-10 minutes or until cheese is melted. Serve and enjoy!
